Introducing Rachel & Liz.  They are the founders of The Lighthouse Bakery – award winning artisan bakery formerly based in South London, now, luckily for us, based in Bodiam Castle, East Sussex. They produce more than 30 different types of bread, some of which are so special that we have been known to devise the dish to compliment it!  We try and use as many different varieties as possible and you’ll typically see at least 5 or 6 interwoven through the menu from the Challah at Breakfast time which is perfect for French Toast, to the Black Russian – delicious on it’s own or with soup…made using a combination of unbleached white flour, stoneground wholemeal flour, light rye flour, rye sourdough, chocolate, butter, molasses, cider vinegar, shallots, water, yeast & salt….
